The Ritz Paris was founded on June 1, 1898 on Place Vendôme by César Ritz, the first hotel to bear his name. This fulfilment of his vision to create an exceptional establishment quickly became a global benchmark in luxury hospitality.

Yes. The Espadon restaurant at the Ritz Paris, located across from the hotel’s Grand Jardin, has held a Michelin star since March 2024, under the direction of Cheffe Eugénie Béziat.
Since January 2026, Olivier Lainé has been in charge of pastry making at the Ritz Paris, following seven years as a teaching Chef at the Ecole Ritz Escoffier. His expertise and creativity embody the excellence of French pastry. Joris Theysset, meanwhile, oversees the creations at Ritz Paris Le Comptoir.
Jérôme Legras is the Executive Chef at the Ritz Paris. He oversees all of the hotel’s kitchens with the exception of the Espadon restaurant, which is helmed by Michelin-starred Cheffe Eugénie Béziat.
The Head Sommelier at the Ritz Paris is Florian Guilloteau. Since June 2022, he has been selecting wines and creating pairings for all of the hotel’s venues, including the Espadon restaurant. He specializes in innovative pairings that may incorporate infusions, broths, and fermented ingredients.
Romain de Courcy is Director of Mixology, practicing his craft at the Ritz Bar. He creates original and subtle cocktails that blend purity, precision, and unique ingredients. His creations are often inspired by nature or by stars.
