Spend five days immersed in the kitchens of the Ecole Ritz Escoffier and perfect your pastry-making skills. From weighing to finishing, you'll learn how to master shortcrust, puff and choux pastries, to work with creams and cake mixtures, assemble desserts with fine precision, create impeccable mirrored glazes and shape decorations with piping. In small groups, under the expert guidance of our Chefs, you'll explore the balance of flavors and learn to revisit the grand classics of French patisserie.

A five-day deep dive
Alternating between technical demonstrations and guided hands-on practice, the unique format of the Summer class enables you to professionalize your method with advice from our Chefs, while enjoying a personally enriching experience. Delivered in French with consecutively interpreted into English, classes can be adjusted to your own pace as the week progresses. The program combines high standards with pleasure, so you can go deeper into your passion in a stimulating, friendly environment. It makes for a sugar-sweet immersion into the world of the professional patissier.

Halfway between a high-end leisure activity and engaging professional training, this initiation acts as a first springboard into the profession: refining the basics, building self-confidence, enhancing skills. It's an ambitious appetizer for those who want to go further, with an eye on certification courses such as the Pastry Diploma. The Summer class signposts the path to excellence, offering a hands-on foretaste of what it means to train seriously in a passion-led profession.

Courses are non-cancellable and non-refundable, but can be postponed up to 8 days before the scheduled date.
- The course is taught in French and interpreted into English.
- Some of the recipes are prepared in pairs.
- Courses are for adults only.
- For one-day courses, lunch is not included and a one-hour break is allowed for.
- To preserve the warm and intimate atmosphere of our classes, which accommodate a maximum of 10 participants, online bookings are limited to 4 guests per reservation. For any request exceeding 4 participants, a private session will be required. Our team will be delighted to assist you by phone or email.
- Any delay exceeding 15 minutes after the scheduled start time will result in the participant not being admitted, in order to ensure the smooth running of the class and to respect the experience of all attendees. In such cases, no rescheduling, refund, or credit shall be provided.
