Caviar opens the door to a fascinating, refined world of subtle aromas and meticulous preparation. Join us for an immersive workshop in partnership with Manufacture Kaviari, to discover what goes into the culinary signature of this rare delicacy. The workshop spotlights two living craft traditions: a passion for the exceptional product, and its culinary application by the Chefs of the Ecole Ritz Escoffier.

From raw material to craft

We meet up in the morning at the premises of Manufacture Kaviari, in Paris’s 4th arrondissement. During an immersive tour of the workshops, we’ll discover the steps involved in crafting caviar from raw product to plate, before a guided tasting of three varieties with distinct flavor profiles. Next we head to the Ritz Paris, for a hands-on cooking class led by a Chef from the Ecole Ritz Escoffier. You’ll prepare two recipes and learn how to showcase caviar at its best, before tasting your creations.

A true art form

Caviar’s exceptional reputation is the result of a long, painstaking process. It can take more than a decade of constant attention to bring the sturgeon to the level required before the precisely skilled craft can begin. From selecting the roe to salting and aging, each step is precisely followed to ensure perfect balance and complexity. The main quality sought is a subtle aromatic richness in which texture, intensity, and length on the palate each play an essential role. Caviar’s principal culinary function lies in the delicate way it complements other flavors, helping reveal their full depth. The whole process from fish to dish is a testament to exceptional craftsmanship, distinguished above all by patience.

Classes cannot be canceled or refunded, but may be rescheduled up to 8 days before the scheduled date.

  • The class begins at 09:00am at La Manufacture, located at 13 Rue de l'Arsenal, 75004 Paris, and ends at 02:00pm at the Ecole Ritz Escoffier. Transport by minibus is included.
  • The class is taught in French, with consecutive interpretation into English.
  • Some steps in the recipes are completed in pairs.

  • Classes are reserved for adults.
  • The workshop can accommodate a maximum of 10 participants with an informal, friendly feel. To preserve this ambiance, online reservations are limited to 4 people per booking.
