This diploma represents the school’s most comprehensive training, as it includes its fundamental courses: César Ritz Course – Ritz Escoffier Course – The Art of French Pastry – French Bread Making & Viennoiserie Course – Cuisine Master or Pastry Master. Students are evaluated continually with examinations leading to diploma that corresponds to each step of training. The Ritz Escoffier Superior Diploma is awarded at the end of the course after passing all these examinations.

Teaching:
- to assimilate techniques and respect food products in order to achieve the best results, and to prepare and present dishes in keeping with traditional and contemporary French savoir-faire.
- to master techniques, to optimize materials and equipment, and to hone skills.
- to develop creativity through the interpretation of existing recipes and the conception of new recipes.
- to efficiently organize work and manage one’s time.
Internship in the Main Kitchen or/and in the Main Pastry
Two months internship in the Main Kitchen or/and the Main Pastry of the Ritz Hotel Paris is offered upon successful completion of the Ritz Escoffier Superior Diploma.
